Instructions
1. Prepare the Sushi Rice:
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Gently fold the mixture into the cooked sushi rice and let it cool to room temperature.
2. Make the Crab Mixture:
- In a medium bowl, combine crab meat, mayonnaise, Sriracha, lime juice, and green onions.

4. Assemble the Towers:
- Use a round food mold or a cleaned tuna can with both ends removed for assembly.
- Place the mold on a plate and layer as follows:
- Add a layer of sushi rice (about 1/2 inch thick). Press down gently with a spoon.
- Add a layer of avocado, smoothing it evenly.
- Top with the spicy crab mixture.
5. Garnish and Serve:
- Carefully lift the mold to reveal the layered tower.
- Garnish with black sesame seeds, chopped green onions, and sliced red chili peppers.
- Drizzle with soy sauce if desired.
Notes:
- For a more tropical flavor, mix diced mango into the avocado layer.
- Substitute the crab with cooked shrimp or flaked salmon for variety.
