Ingredients:

  • 1 pound sushi-grade ahi tuna
  • 1 Persian cucumber, thinly sliced
  • 1/4 cup extra virgin olive oil
  • Zest of half a lemon and half an orange
  • Juice of 1 small lemon
  • Juice of 1 small orange
  • 2 tablespoons caper juice/caper brine
  • 1–2 tablespoons capers
  • To finish: toasted sesame seeds, flaky salt, black pepper, rice paper crisps (optional)

Instructions:

  1. Make the vinaigrette:
    In a small bowl, whisk together olive oil, orange juice, lemon juice, lemon and orange zest, caper juice, capers, and a pinch of salt and pepper. Set aside.

  2. Slice the tuna:
    Use a sharp knife to slice the sushi-grade ahi tuna as thinly as possible. Arrange the slices on a serving platter or tray.

  3. Assemble the crudo:
    Place a thin slice of cucumber on top of each piece of tuna. Drizzle the citrus caper vinaigrette over the tuna, or spread the vinaigrette on the platter before layering the fish.

  4. Finish and serve:
    Sprinkle black pepper, toasted sesame seeds, and flaky salt over the crudo. Optionally, add more lemon and orange zest for a burst of freshness. Serve with crispy rice paper chips for added texture.
