Ingredients:
- 1 pound sushi-grade ahi tuna
- 1 Persian cucumber, thinly sliced
- 1/4 cup extra virgin olive oil
- Zest of half a lemon and half an orange
- Juice of 1 small lemon
- Juice of 1 small orange
- 2 tablespoons caper juice/caper brine
- 1–2 tablespoons capers
- To finish: toasted sesame seeds, flaky salt, black pepper, rice paper crisps (optional)
Instructions:

Make the vinaigrette:
In a small bowl, whisk together olive oil, orange juice, lemon juice, lemon and orange zest, caper juice, capers, and a pinch of salt and pepper. Set aside. -
Slice the tuna:
Use a sharp knife to slice the sushi-grade ahi tuna as thinly as possible. Arrange the slices on a serving platter or tray. -
Assemble the crudo:
Place a thin slice of cucumber on top of each piece of tuna. Drizzle the citrus caper vinaigrette over the tuna, or spread the vinaigrette on the platter before layering the fish. -
Finish and serve:
